A very worthy sandwich I tested on our most recent beach trip. Butter-fried piles of mortadella and provolone, topped with pepperoncinis and chili mayo (my own twists) on a ciabatta roll. My younger brothers were impressed enough to ask me exactly how I made it and any eldest sister knows that is a serious win.

Great Mortadella is worth tracking down but I’m a mom and I can only go to so many grocery stores. Trader Joes got the job done just fine!
